The case for accurate baking conversions

Most conversion tools use water density (1g/mL) for everything. That gives reasonable results for liquids but is significantly wrong for flours, sugars, and fats. One cup of all-purpose flour is 120g. One cup of bread flour is 127g. One cup of cake flour is 100g. One cup of almond flour is 96g. Using water density for all of these introduces errors of 15–60%.

Every conversion in this category uses the correct density for the specific ingredient. Where manufacturer data exists (King Arthur, Bob's Red Mill), we use it. Where it doesn't, we use USDA measurements and the “spoon and level” standard that professional baking recipes assume.
